My offering for this week’s Foodie Friday is, plain ol’ down home meatloaf.  Thankfully, the concoction I prepared didn’t turn into a trainwreck.  You just never know what might happen in our kitchen!!

There are many meatloaf recipes.  Mine is similar to the meatloaf my mother made.

Pat’s Meatloaf

1.5 to 2 Lbs. ground beef (I used sirloin)

1/4 Cup chopped onion

1/4 Cup chopped green bell pepper

1 Clove garlic, chopped

2 Eggs, slightly beaten

1 Cup crushed saltine crackers. Other options are oatmeal or crumbled bread.

Salt & Pepper to taste

Preheat oven to 350 (F)

Line a cookie sheet with foil.

Mix ingredients in a bowl or 1 gallon zip lock storage bag.  Form the mixture into a loaf, on the cookie sheet.  Cover with foil and bake about 1 hour.  After an hour, uncover the loaf and spread with ketchup. Return to oven uncovered for about 30 minutes, or until inside temperature reaches 160 and/or meat is no longer pink.

As I prepared the sides, I could hear my mother’s voice in my head.  She was trying to make me understand something she always tried to teach me. Her voice, as clear as day, was telling me to please not serve two starches in a meal.  Although I usually try to get those greens into a meal, I didn’t this time. J does love his corn and taters and he loves them on the same plate! 

I sort of got around Mother’s two starch rule by also serving a wedge salad; giving our meal a tad bit of balance.

We plan to leave the lake, tomorrow (Friday). We’ll be home several days, to take care of a few things.

We have a date to meet a fellow blogger next week. This will be my first time to meet someone from the land of blog. I met a reader at Hemingway’s (Bass Pro) in Springfield, a couple of years ago. She didn’t have a blog, though.  J met Dana, from The Stone Rabbit, last year.

We managed to get through the storms okay.  We had lightning, thunder, and rain, but no wind.
