I’m combining Tablescape Thursday & Foodie Friday with a table set for summertime and cool summer foods. Visit Susan to see beautiful tablescape's and Michael for delightfully delicious dishes.

tableO1 A slice of cold Watermelon on a hazy, lazy, crazy day of Summer.

tableS2Two scoops Blue Bunny Orange Dream Ice Cream, topped with a dark chocolate and almond Lacey (Whole Foods); garnished with orange peel and a tiny sprig of mint.

Tip: For something different, try barware when serving desserts .

flowers2 Melon and berries, served with Cream Fraiche.

tableS1Fresh fruit, poppy seed Scones and a wedge of Laughing Cow Original Light cheese.

Seven Layer Salad

1 head iceberg lettuce~chopped

1 head cauliflower~chopped

1 bag frozen peas

6-8 slices bacon~microwave, drain, crumble

6-8 scallions, sliced thin

1 16 ounce jar light mayo, sweetened to taste (artificial sweetener may be used)

1/2 cup grated parmesan cheese

In a large bowl, layer lettuce, cauliflower, scallions, and peas. Mix sweetener with mayo, stir well and spread over peas. Top dressing with grated cheese, then bacon. Garnish with a few sliced scallions. Do not mix. Cover and refrigerate for 8 hours or overnight. Mix salad, just before serving.

When I make this, for family gatherings, I serve the onion on the side, at the request of a couple of our children.

This salad looks gorgeous in a trifle bowl. I’ve made it this way a few times. However, I have to transfer to a larger bowl, for mixing, just before serving.

This is a family favorite.

Enjoy!

tableZZ I served Seven Layer Salad, with Texas Toast, for our Tuesday night supper. The salad is delicious as a meal or as a side dish.

Limeade

Sparkling Water

Limes

Confectioners Sugar

Lime slice and cherry for garnish

Pour small amount of sparkling water into 10 ounce glass , add 2 heaping teaspoons confectioners sugar, dissolve; add juice of 1.5-2 limes, stir thoroughly. Add ice, fill with sparkling water, stir, garnish, enjoy!

I’ve added Grenadine to Cokes, for cherry Cokes; this might work for cherry limeades, also.

6/4/09…Just had a call from one of our daughters. She and our son in law will arrive, at the lake, late this evening.  They put in a Friday dinner request; Seven Layer Salad!  I’m on my way out for ingredients.

 Just a Note:

Marty, of A Stroll Thru Life, is hosting a Cloche Party, June 19th.  For details, stop by Marty’s.

Oh my word, the food looks sooooooo good. I love fruit and you have so many pretty things there to choose from and the salad sounds wonderful. I've copied the recipe and I can't wait to try it. This just sounds like such a cool and refreshing meal on a hot day. Love your gorgeous tablescape too. BTW, thanks for joining the Cloche Party, I think it will be a lot of fun. Be sure to tell everyone so a lot of people can join us and we can see all their wonderful creations. Several have mentioned they also want to share their apothecary jars. So if you have some that you've decorated and want to share, please feel free. Thanks again, Hugs Marty

Oh Pat....you do it all so well! I love the pic of lunch with a cornr of your laptop showing!

The seven layer salad and some garlic toast sounds like such a yummy and fairly light dinner!

But my fave is the pellegrino limeade. Oh. Heaven to Betsy.

Your husband must be mighty pleased with who he managed to marry. What a cook! Who taught you to cook so, girl? You come up with things I haven't even heard of. I would be fat as a tick if I lived in your parts. Cause I'd be sniffing around for some of that food of yours. I love that shot of the glass with the other glass seen through it. A very nice touch!

Looking through your blog is like reading through my very favourite Home and Garden Magazine Pat, only much better, it has everything, interior design, gardening, cooking, photography, travel, and even a family and pets section and the best thing is I don't have to wait a whole month before it arrives :-)
Beautiful summer table and delicious food, Kathy.

I just love 7 layer salad. I have only recently been making scones. I'll have to try the poppy seed scones. I may have to sneak more strawberries. Once I start eating, I don't think three is enough.

Pat, I don't know where to begin!! This was a terrific post! Your photos are just fabulous--that watermelon just popped out of my computer screen! I had to dab the juice off my keyboard--REALLY!! :)

Your lake photos make me long for a trip to the Ozarks this summer--I hope we can do that--we used to go every year to Bull Shoals when our kids where young.

Your tablescape and that amazing food--OMG, all were just lovely!! I haven't fixed that salad in a long time--I love it, too, so I must make it soon! Thanks!!

Happy Wednesday! Dana

Hello Pat your fruit is divine. I had a nice bowl of fruit for breakfast. Mmmmmmmm. No strawberries though. Your variety of dishes is an attractive part of the fruit. Presentation is everything. Smile. I have often made 7 layer salad. I never thought of putting it in my trifle bowl. A great idea. Mine has a lid too. How wonderful to have your daughter and her hubby for a visit. Enjoy!

We are in Jackson Hole, Wyoming today. I posted some photos from our trip to St. Charles. I think some of them were taken in the ice cream store. Then some more photos of Yellowstone. Now, a new adventure in the Tetons.

Until next time.

Hugs...Jeanne
