When we are at the lake, I try to keep cooking to a minimum, but still have delicious and pretty meals.
I love vegetables. J, on the other hand, believes any vegetable, other than a potato and sometimes a tomato, is just a necessary evil.
He likes this dish!
I don’t know if this qualifies as Pasta Primavera or not. I do know, it is easy to put together and very good.
I served the pasta with a salad and peasant bread. This was one of those half baked loaves, found in super market bakeries.
White wine is a nice addition to the meal.
Pat’s Pasta
1 package fettuccine…
1 large can crushed tomatoes…
1 or 2 packages Steamers Basil Medley Vegetables. This has basil butter sauce.
Add basil, oregano and garlic powder to tomatoes, to taste and simmer, while pasta is cooking.
Microwave vegetable mix.
Add about a tablespoon of EVOO to large bowl, add drained fettuccine and toss, then mix in tomatoes.
Serve topped with vegetable medley and freshly grated parmesan cheese.
There is still a little bit of ice on the lake. We’ve had warm temperatures the past couple of days. The snow is disappearing.

And the lake pics ARE pretty.....we've finally warmed up again in South Texas too. Last weekend was below freezing and this weekend....mid 50's. :( I like it cold during the winter and we don't get too much of that.

I can't get enough of veggies. The medley mix is a wonderful way to get all the great flavors into the dish. I've got this memorized, Pat!!

Sounds Yummy!! I am always looking for quick heathly filling dinners for our family as my daughter's time is spent at the gym playing volleyball and dinner needs to be something that doesn't take hours.

The food looks delicious...that loaf of bread nearly "done me in"...We, just yesterday, started on the Phase 1 of South Beach Diet..for 2 solid weeks, no bread, flour, sugar, starches...at the end of 2 weeks, we can add some grains and whole wheat flour into our diet. Splenda and I are already best friends but, o, I am missing my flour !!!!!!
extra virgin olive oil! well why didn't you say so! ha ha! all these acronyms today!
now Pat, I have the perfect opportunity to NOT show how dumb I can be, but I admit, I was logged in with my essa email address when I posted those last two comments. Maybe I need to quit for the night? ha ha!
Yummy! I use the packages of steamed vegetables in so many ways. We like the one with the rice and I add grilled chicken or salmon.
I love the pictures of the lake with the ice. They are just fantastic. Have a great time.

So J is a true meat and potato guy...the meal looks amazing,but oh my gosh I could eat that loaf of bread with some butter. I am so bad!

Did you get to the antique shop? I really loved that store. I never get tired of shopping for antiques even though I do not buy much these days.
Thank you for the compliments on my quilt. I have enjoyed each days contribution by arranging the squares to match the picture. There is soooo much to do after this part is finished. Sewing will be tedious and then the birds. I hope I can do this justice. I'm happy to be working on it each day.

Looks so yummy - makes me want to pull up a chair to the table and share in the meal. Love the pics of your icy lake. We've got cars driving on ours moving their fish houses around - still freaks me out when I see it, LOL.
