Shepherd's Pie originated in England and Scotland. This dish is often found on the menu at Irish restaurants. There are many recipes for Shepherd's Pie. I believe, originally, lamb was used in the dish.
The pie, I made for this event, is my mother's recipe.
~SHEPHERD'S PIE~
Preheat oven to 375.
2 lbs ground beef ( I used sirloin).
2 lbs potatoes
1 cups frozen peas
1 cups sliced frozen carrots
1 medium onion (diced)
Shredded cheese (I used cheddar)
Peel and quarter potatoes. Boil until tender.
While potatoes are cooking, brown beef and onion in skillet. (Drain)
Cook peas and carrots in microwave, according to package directions.
Mash potatoes, with butter and milk.
In a baking dish, layer ingredients, beginning with beef, next peas and carrots, top with mashed potatoes. Spread shredded cheese over potatoes.
Bake approximately 30 minutes or until cheese is lightly browned.
Serve with rolls and a green salad.

***The swan bench, seen in the previous post, was purchased at a large antique mall in Clarksville, Missouri. We thought about it awhile, after seeing it the first time. Luckily, as was the case with the secretary, the bench was still available, when we finally got around to making a decision!
