~A Bowl of Soup & Two Sandwiches~

BBQ

BBQ Beef

1 beef roast

1 can Coke or beer (I used Diet Coke)

garlic powder or 2-3 garlic cloves

bbq sauce of choice (I used Kroger Honey BBQ Sauce)

Place roast in slow cooker, add 1 can of Coke, Diet Coke or beer.

Sprinkle with garlic powder or make several small slits in roast and add sliced garlic.

Set on low and cook about 10 hours.

I cooked the roast, for this BBQ Beef, overnight.

When the roast is finished cooking, remove from cooker, cool enough to shred.  Add sauce and heat or serve sauce on side.

Serve on sandwich buns with sliced pickles, raw veggies, slaw and/or chips.

Deli Corned Beef, sliced thin

Lorraine Cheese

Cabbage, finely chopped

Cole Slaw Dressing…store bought or homemade

Rye Bread

Butter

Mix dressing into slaw to taste.

Layer Corned Beef thickly, on bread, add a layer of cabbage, a slice of cheese, more corned beef and slaw, ending with cheese.

Melt butter in skillet, grill sandwich.

soupb1 Vegetable Soup

2 quarts vegetable stock

2 tablespoons bouquet garni (sweet basil, marjoram, savory) tied in cheesecloth

1 bay leaf

garlic powder, to taste

1 tablespoon dried onion flakes

1 packet splenda or a teaspoon of sugar

1 can diced tomatoes

1 can kidney beans

1 cup cabbage, chopped

2 medium potatoes, chopped

6 carrots, chopped

1/2 cup frozen peas

1 small can sliced water chestnuts

1/4 cup lentils

1/4 cup barley

1 cup fresh spinach, chopped

In a heavy stock pot or dutch oven, simmer all but spinach, 1.5 hours. Add spinach and simmer 1/2 hour more. Remove garni and bay leaf. Serve soup with crusty bread.

You can add any vegetable combination, you wish. I tend to throw in everything but the kitchen sink, when I make soup!

Serve with dinner rolls, warm from the oven.

This soup was prepared during a weekend at the lake.  I featured the recipe in an October 15, 2007 Back Porch Musings post.

~Preview~

We visited Lori and Greg, at All About Home, this morning.  I took several photos. The shop looks beautiful for Spring.  Afterward, we walked over to a new wine shop, for lunch. I took photos there, also.  Look for a post about All About Home and My Three Ladies Wine Haus, next week.

The weather, in northeast Missouri, appears to be improving. Spring will be here soon. We’re talking about driving down to the lake, for a couple of days.
